Penne con crema di peperoni

When it has to go very quickly, I make myself this spicy dish: The penne come out of the package. And you always have some tomatoes, basil and hot peppers in the house!

Ingredienti

For 4 people you will need:

  • 320 g Penne Rigate
  • 400 g red peppers
  • 250 g canned tomatoes (but the good ones!)
  • 1 clove of garlic
  • Basil to taste
  • Extra virgin olive oil to taste
  • Salt to taste
  • Black pepper to taste
Preparazione

Put the pasta in boiling water and then wash and cut the peppers. Very important: remove the small seeds! Put the tomatoes, peppers and garlic in a pan with hot oil, season well (at least that’s how I do it; it can be hot for me!) and simmer for 15 minutes. Then puree everything with a hand blender or in a food processor and pour the cream over the previously drained pasta. Do not let the pasta boil away! In Italy they are eaten al dente. You can add some more pasta water if they didn’t pour that away. Then it will be juicier. But not everyone likes it. Basil on top and it’s a quick lunch dish. Buon appetito!
